Tuesday

Hello everyone!  I hope all is well with you all.  We have been busy with canning and other misc. things.  Seems to me time surely does go by quickly.  Yesterday we canned pickles.  We did 8 pts of bread and butter pickles.  These are Hubby’s favorite.  Then we did 12 pts of dill pickles.  Today we are canning green beans.

I wanted to let you all know I made the refrigerator pickled beets last week and they are really  good.  I also made the Dutch oven bread.  It was very good as well.  We thought the bottom crust was a little tough.  I think I may reduce the temperature in my oven next time and see if that makes a difference.

Jess had a spell with veritgo last week.  It sure was rough on her.  The girls and I went down Thursday and Friday to help out with the kids.  They sure are a lot of fun.  Daniel’s first day of school was yesterday.  He was SO excited!  He called me when he got home and told me all about it.  Now, how sweet is that!!

We were pretty warm here last week but seem to have cooled down some this week.  At least yesterday was cooler.  Hopefully, today will be as well.  Well, I guess those beans won’t can themselves.  Enjoy your day and God bless.

Update

Hello everyone!  I hope all is well in your life.  I still do not have my computer back but I thought I would post a little update while I had access to a computer.   The keyboard Dave ordered for Grace’s computer did not work so she is still using mine.  Oh well, the things we do for our children!

We have been busy here.  The garden is doing fairly well.  We have had tons of rain though.   We have been harvesting beets, cucumbers, carrots and such.  We planted a new type of beet this year.  They are called Chioggia beets or candy striped beets.  They look like this http://www.rareseeds.com/chioggia-bassano-beet.  They are really pretty.  I will definitely be planted them again.  I want to try out a new pickled beet recipe refrigerator pickled beets.

We picked blueberries last week.  We made blueberry freezer jam using the pomona pectin.  I really like using it.  Thanks, Cheryl, for telling me about it.   We also made homemade blueberry ice cream.   So good!!!

I’m sure there is lots more going on around here but I just can’t seem to remember it all.  That’s what happens I guess when I don’t do a post for a long time.  I hope you all have a great Sunday and God bless.

Homemade Coffee Creamer

Honey Vanilla Coffee Creamer

Makes about 2 1/4 cups

Whisk together cream, milk and honey in a medium saucepan over medium heat. When the mixture begins to steam, remove from the heat. Whisk in vanilla. Pour into a glass bottle and store in the refrigerator.

Hubby likes cream in his coffee.  I usually buy this from the store.  Today in my laziness, (I did not want to drive into town)  I decided to see if I could find a recipe to make our own.  I went to my favorite place, Google, came across this recipe and many, many more.  I chose this one because I had all the ingredients.  (Remember I do not want to drive into town).  I’ll test it out tomorrow morning and see if he likes it.  Anyway, I was very excited about finding this and couldn’t wait to share it with you ladies.  I”ll let you know if he likes it.  Enjoy your day and God bless.

P.S.  I apologize to http://www.deliciouslyorganic.net.  I did not mention that this is where I got this recipe.  I have been asked to remove the recipe but if anyone is interested in getting it you can go to the above mentioned site.

Wednesday

I hope you all are not tired of sunrise pictures.  I just love a beautiful sunrise and we get some amazing ones here.   I thought this one this morning was especially beautiful.

Today while the girls worked on school, I worked on the dreaded refrigerators.  We have two refrigerators here in the house.  One is a side by side and the other is just a regular refrigerator with the freezer on top.   So many little cups of this and cups of that had been stored over the holidays.  It was getting impossible to find space to put new cups of this and that.  I decided enough was enough.  I cleaned both of them out completely, removed the shelves and washed them.  I stood back and looked at them and was amazed at how much better they looked.  Empty but better.  So good that I decided to do the freezers too.  Amazing!  I actually have space in the fridges and the freezers now.   I thought I would never get all those containers washed.  I decided since the girls were working so hard on school, I would let them out of that chore today.  Thats one job I am glad to have done.

While we were inside working on this Hubby was busy splitting wood. (Dave, he has your splitting maul sharpened and ready for you!)  After we were finished inside, we went out and helped him move all the split wood inside the wood building.  It was a fairly nice day for working outside.  Temperature was around 30 degrees with occasional sunshine.

Enjoy your evening and God bless.
