Mountain Mama… Country Living

Good morning everyone! I hope you are all having a great day.
My canning project yesterday was canning some pork tenderloin. I usually can it in chunks and do the hot pack method. Yesterday I used the raw pack method and sliced the pork. We will see how this turns out. I really like how they look in the jar and definitely plan on doing the raw pack from now on.
It is a misty, rainy, foggy morning and I love it. I have fall candles lit and plan on enjoying my snuggle in day with some crochet.

Good morning everyone! I thought I would share a few pictures this morning. This is our rampicante squash. It always amazes me how this grows!

This is all from one plant and it is still growing and putting on new blooms. I like to let some of them stay on the vine and harvest them like winter squash. We will eat the new ones that are coming on as fresh zucchini. Delicious!

I also wanted to show my weed tunnel!

The first year this happened, I thought, wow, I really should have done something about all these big weeds!

But then one of the grandkids came over (I don’t remember which one) and we were walking up to the garden. They come to a complete stop, eyes wide with wonder and said “Mawmaw, it’s beautiful. I didn’t know you had a tunnel going up to the garden.”
Beauty is definitely in the eyes of the beholder. So now I choose to enjoy the magic of this tunnel. Lesson learned!
