Oven Roasted Asparagus

  • 1 bunch thin asparagus spears, trimmed
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons grated Parmesan cheese (optional)
  • 1 clove garlic, minced(optional)
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon lemon juice(optional)

Directions

  1. Preheat an oven to 425 degrees F (220 degrees C).
  2. Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer.
  3. Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness. Sprinkle with lemon juice just before serving.

Crispy Fried Fish

2 tbsp. parmesan cheese, 2 tbsp flour, 6 tilapia fillets, 1 tbsp. olive oil, 1 tbsp butter.  Mix cheese and flour in pie plate.  Dip fish, 1 fillet at a time in cheese mixture coating both sides.  Heat oil and butter in large nonstick skillet on med. high heat.  Add fish fillets-cook 4 to 5 min. on each side or until fish flakes easily with fork.

Never buy boxed brownie mix again! So simple, so easy. Not just frugal but cuts out the unknown ingredients. Brownie Mix $0.30 /mix. 1 Cup Sugar, 1/2 Cup Flour, 1/3 Cup Cocoa, 1/4 tsp Salt, 1/4 tsp Baking Powder. Add: 2 Eggs, 1/2 Cup Vegetable Oil, 1 teaspoon Vanilla. Bake @ 350 degrees for 20-25 minutes.

Vanilla Yogurt

4 cups milk (your choice whole-skim)
1/2 cup powdered dry milk
1 tablespoon vanilla extract
4 -6 tablespoons sugar (Splenda or honey) = 1/2 cup
1/2 cup yogurt starter (unflavored plain yogurt with active cultures)
Directions:

Set 1/2 yogurt starter out to warm to room temperature.

Heat the milk to almost a boil.(I like to microwave in a glass bowl for 5 minutes on high then 2 minutes on medium). About 180 degrees.   Cool the milk-about 110 degrees- (to a “barely warm”/ babies bath temperature) (cool water bath works well). Add dry milk, vanilla and sweetener of your choice; stir well.

Stir in yogurt starter (do not whip but mix very well!).

“Cook” the yogurt using your preferred method and time (longer makes a firmer, more tart yogurt. I like to cook about 12 hours). Chill 4 hours before eating.

Spaghetti with Shrimp and Broccoli

1/2 lb spaghetti uncooked

4 cups  small broccoli florets

1/2 cup  KRAFT Tuscan House Italian Dressing
1 lb.  uncooked deveined peeled large shrimp
2 cloves  garlic, minced
1/4 cup  KRAFT Grated Parmesan Cheese

COOK spaghetti in large saucepan as directed on package, omitting salt and adding broccoli to the cooking water for the last 2 min.

MEANWHILE, heat dressing in large skillet on medium-high heat. Add shrimp and garlic; cook and stir 3 to 4 min. or until shrimp turn pink.

DRAIN spaghetti mixture; return to pan. Add shrimp mixture and cheese; mix lightly.

SPECIAL EXTRA
Add 1/2 tsp. crushed red pepper to the hot dressing along with the shrimp and garlic.
VARIATION
Prepare using thawed frozen cooked cleaned large shrimp, and reducing the cooking time for the shrimp and garlic to 2 to 3 min. or until the shrimp are heated through.

Fried Rice

INGREDIENTS
3 cups cold cooked rice (1 cup dry long-grain rice yields 3 cups cooked)
2 Tbsp vegetable oil
1/2 cup ham, diced
1 small onion, diced
1 tsp jarred minced garlic (or 2 minced fresh cloves)
3 medium carrots, peeled and diced
1 small head broccoli, stem discarded, florets chopped
2 eggs
1/4 cup low-sodium soy sauce

DIRECTIONS
Heat the oil in a large skillet over medium-high heat.

Add the ham. Cook, stirring occasionally till ham is lightly browned.

Add onion. Cook for 2 minutes until onion is fragrant, then add the garlic, and cook an additional 30 seconds or so.

Add the rest of the vegetables and cook for 3 minutes, stirring occasionally.

Push the ham and vegetables to the sides of the skillet with your spoon, and add the eggs, scrambling them, then incorporating them with the vegetables.

Add the rice, and stir everything together. Add the soy sauce, and stir till rice is hot, and everything is mixed together.

Serve immediately.

Homemade Air Freshener Spray

DIY VANILLA AIR FRESHENER SPRAY

You will need:

  • 1 Cup Water

  • 3 Tablespoons Imitation Vanilla Extract

  • Mist Bottle

Combine the water and the vanilla extract.  Place in a mist bottle.  To use, spritz some of the spray up into the air as needed to add the warm cozy smell of vanilla to the room.

Homemade Furniture Dusting Spray

HOMEMADE FURNITURE DUSTING SPRAY

  • 1-3/4 cups water

  • 1/4 cup white distilled vinegar

  • 2 teaspoons olive oil

  • 1/4 teaspoon lemon essential oil (about 8 to 10 drops)

Combine the ingredients in a clean spray bottle of at least a 16 oz size.  Shake well to mix.

To use, spray onto wooden furniture and wipe off with a soft cloth to dust and clean the surface.

You’ll have to keep shaking this mixture as you use it to keep the oil and water mixed together, which really isn’t a big deal.  You already have the bottle in your hand to spray it, just give it a shake too!

Homemade Liquid Laundry Soap

HOMEMADE LIQUID LAUNDRY SOAP

1 Bar of Ivory Soap, Fels Naptha, or homemade laundry bar soap-grated= I use 2 cups grated homemade laundry bar soap
4 cups of Water
1 cup Washing Soda
1/2 cup Borax
3 Gallons Warm Water

1.  In a saucepan, bring the 4 cups of water to a boil.  Add the grated bar soap and stir until the soap is melted.

2.  Fill a large pail or container with the 3 gallons of warm water.  Add the washing soda and the borax.  Stir until mixed.

3.  Add the melted soapy mixture from your saucepan to the pail and stir.

4.  Transfer to smaller containers, or cover your mixing container or pail with a lid, and let set for 24 hours, giving it a few stirs during that time.

4.  Use 1/2 cup to 1 cup per load.

I have found that 1/2 cup does most normal loads but for heavily soiled laundry I use 3/4 to 1 cup.

Mix everything together and pour into a spray bottle.

Before you go to use it…if it’s been sitting for awhile, shake it up.  To use: spray on stains as you normally would.    Then launder as usual.
