Beach 2023

Day 1

Good morning everyone!

As you can tell, we are at the beach! We drove down yesterday. It takes about 9 hours for us to get here so as you can imagine it is a long day. We left about 6:45 and arrived at our rental about 4. First we unloaded the car, then went to Dairy Queen for supper. We enjoyed our chicken strips at one of the picnic tables DQ provides then we went straight to Driftwood beach. It is our favorite beach and always the first one visit.

By this time, it was getting late and time to go see the sunset.

We discovered this beach last year when we were here. It is a beautiful place to see the sunset. I think the name of it is St. Andrew’s beach.

After the sunset, we went back to the rental, drank some tea and relaxed for while. We want to bed early as it had been a LONG day!

Siracha Sauce

Good morning everyone! I hope you have all been having a great summer. I know I haven’t posted a lot but hopefully I will do better😉 I am making siracha sauce today. This is Jess’s all time favorite hot sauce.

I have these beautiful red jalapenos given to us by a friend, in our beautiful Hoss tools basket.

Tomato Pie

About 4 tomatoes sliced. Could take more or less depending on size of tomatoes.  Put sliced tomatoes on paper towel to absorb liquid. Sprinkle tomatoes with salt and garlic powder.

3 or 4 bacon strips, fried and crumbled, mix together 1/2 cup mozzarella cheese, 1/2 cheddar cheese, 1/2 shredded parmesan cheese,  1/2 cup diced onions and peppers (or more if desired),  1 cup mayonnaise or 8 oz garden style cream cheese.  May need a little milk to make the cheese mixture creamy. About 10 fresh basil leaves chopped

1 9 in prebaked deep dish pie shell

Preheat oven to 350

In prebaked pie shell, layer tomato slices, basil, and cheese mixture. Bake for 30 minutes or until lightly brown on top.

Copycat Subway Pickles

Here’s the recipe and preparation instructions for making pickled banana peppers like Subway:

Ingredients:

1 pound banana peppers
1 cup white vinegar
1 cup water
1 tablespoon sugar
1 tablespoon salt
2 cloves garlic, minced
1 teaspoon dried oregano

Instructions:

1. Prepare the Peppers: Wash the banana peppers thoroughly. Remove the stems and slice the peppers into thin rounds.

2. Make the Pickling Brine: In a large bowl, combine the white vinegar, water, sugar, salt, minced garlic, and dried oregano. Stir until the sugar and salt are fully dissolved.

3. Combine Peppers and Brine: Add the sliced banana peppers to the bowl, ensuring they are completely submerged in the pickling mixture.

4. Refrigerate: Cover the bowl with a lid or plastic wrap and refrigerate for at least 24 hours to allow the flavors to meld.

5. Store: After 24 hours, transfer the pickled banana peppers to a clean jar with a tight-fitting lid. Store in the refrigerator for up to 2 weeks.
