Hello everyone!  I thought I would share a few pictures of a beautiful rainbow God gave us the other evening.

It was very pretty.  Today we went to Pastor Tom’s to pick apples.  We ended up picking about 11 bushels.  I think you all can guess what we will be doing for a while.  I also wanted to share with you all a great post I found this morning on making coffee creamer.  This sounds delicious and I can’t wait to try them out.  You can check out all the flavors here http://www.mrshappyhomemaker.com/2013/03/homemade-coffee-creamer-over-20-flavor-varieties.

Flavored Coffees

You all know what a big fan I am of flavored coffee creamers.  Well, I also love flavored coffees.  They are expensive though.  My lovely daughter (Jess) bought me a subscription to Kraft Foods Food & Family magazine.  I love it!   Here are two flavored coffee recipes I got from the magazine.  I made this one yesterday.

Maple Cinnamon Coffee

6 tbsp. ground coffee, 1/2 tsp ground cinnamon, 1/2 cup pancake syrup, 4 1/2 cups cold water, 6 tbsp thawed cool whip.   Place coffee in filter in brew basket of coffee maker, sprinkle with cinnamon.  Pour pancake syrup into empty coffee pot.  Add water to  coffee maker, brew.  When brewing is complete , stir until well blended.  Top with cool whip.   I did not follow their recipe exact.  I just made us 6 cups of coffee, using the amount of ground coffee I always do.  Adjust it to your taste.  I did not top mine with cool whip.  I did however use coffee creamer.  This is good with  gingerbread creamer but you could use whatever you like.  There are lots of new flavors available right now.

I made this recipe today.  Spiced Orange Coffee.  Into the brew basket I added the ground coffee, enough to make 6 cups.  Add to the coffee grounds, 1 tbsp orange zest, 1/2 tsp ground cinnamon.  Put 1/3 cup packed brown sugar into empty coffee pot.  Brew.  Stir until sugar is well blended.   Both these coffees were very good.   I know many of you don’t like coffee but maybe you could use these recipes with tea or even hot chocolate. 

We have gotten tons of rain yesterday and today.  They are forecasted us to get snow flurries tonight.  We’ll see.  Right now, it is just gloomy and soggy wet.  Temperature is mid 40’s though so that is nice.  School is finished for the day so I guess I better get busy doing other things.  Supper tonight is fried chicken, biscuits, gravy, corn and  homemade jam for dessert.  I hope you all have a great evening and God bless.

Today has been a beautiful day here in Floyd.  Plenty of sunshine with a good breeze.  Perfect for drying clothes on the line.   I love to see clothes flapping in the wind.  This means they will dry quickly and will be so soft. 

I tried a new homemade coffee creamer today.  It is Almond Coffee Creamer.  I changed the recipe some to suit our tastes.  3/4 cup powdered sugar, 3/4 cup non-dairy coffee creamer, 3/4 cup powdered milk, 1/2 tsp. cinnamon, 1 tsp almond extract.  Put all ingredients into blender and blend well.  I must admit I had some trouble getting it to blend together  but I just keep on trying.  I like almond extract in other things so I thought it would be worth trying.  I do like it and think it would definitely be worth making again.   I was wondering if I could  use this same recipe with different extracts, peppermint for example.  I’m not sure how the cinnamon would go with the peppermint though.

Gingerbread Coffee Creamer

Today I tried a new recipe.  Gingerbread coffee creamer.    I got the recipe from food.com I added 1 cup powdered milk to the recipe, as I like mine extra creamy. 

  • 2 cups non-dairy powdered coffee creamer or 2 cups powdered nonfat dry creamer or 2 cups powdered coffee creamer
  • 1/4 cup Splenda brown sugar blend or 1/2 cup packed dark brown sugar
  • 1 teaspoon ginger
  • 1 1/4 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon clove

Directions:

    1. Blend well in a blender.
 
    You will see specks of the spice in the mixture.  I have already tried this recipe and I thought it turned out great.  I think I really like making all these flavored coffee creamer.

Homemade Pumpkin Pie Spice Coffee Creamer

I thought I would share with you all my recipe for pumpkin pie spice coffee creamer.  I got the original recipe from http://drink.betterrecipes.com/pumpkin-pie-spice-coffee-creamer.html  I have altered it a little to suit our taste.  I use 1 cup plain non dairy coffee creamer, 1/2 cup sugar, 1/2 cup powdered milk and 1 tbsp pumpkin pie spice mix.  Mix together with a whisk. After mixing,   I put the mixture in my coffee grinder and grind it up a little finer than it already is, just to make sure everything is incorporated.    This creamer goes wonderful with the pumpkin spice coffee I told you all about yesterday.  This jar is for Jess, per request.  We will be going down on Saturday for her baby shower.

Homemade Coffee Creamer

 

Honey Vanilla Coffee Creamer

Makes about 2 1/4 cups

Whisk together cream, milk and honey in a medium saucepan over medium heat. When the mixture begins to steam, remove from the heat. Whisk in vanilla. Pour into a glass bottle and store in the refrigerator. 

Hubby likes cream in his coffee.  I usually buy this from the store.  Today in my laziness, (I did not want to drive into town)  I decided to see if I could find a recipe to make our own.  I went to my favorite place, Google, came across this recipe and many, many more.  I chose this one because I had all the ingredients.  (Remember I do not want to drive into town).  I’ll test it out tomorrow morning and see if he likes it.  Anyway, I was very excited about finding this and couldn’t wait to share it with you ladies.  I”ll let you know if he likes it.  Enjoy your day and God bless.
