Today is a beautiful day here in Floyd.  The sun is shining.  Temperature is 55 degrees.  I LOVE IT!  I know there are lots of people who enjoy winter and cold weather.  I am not one of them.  For my part, it could just stay like this until spring.  I’m pretty sure it won’t though.  We have lots of geese on the pond today.  Probably close to 50.  They seem to be enjoying the warmer temps too.

We have been busy today making treats for Jessica’s “goodie” basket.  So far, we have made chocolate chip cookies and Russian tea cakes.  We still have Martha Washington balls and peanut butter balls to make.  She always wants ritz crackers with peanut butter spread between them, dipped in white chocolate with an m & m on top(I have no idea what this is called but it is one of her favorites).  Tomorrow I will be baking a ham and making homemade rolls.  Other things on the menu (as of right now)-pasta salad, green beans, cocktail weiner, angel punch and sausage balls.

Martha Washington Balls

I know this picture looks just like the picture of the peanut butter balls but it really is a different picture.  These are the Martha Washington Balls.  The recipe is:

2 boxes powdered sugar, 1 stick butter softened, 1 can sweetened condensed milk, 1 tsp. vanilla.  Using mixer, blend ingredients together.   Mixture will be stiff.  Add 4 cups chopped pecans.  Put powdered sugar on hands and roll into small balls.  Chill.  Dip balls into melted chocolate.  Use 4 cups chocolate chips and 1/2 block parafin wax.   DELICIOUS!

Temperatures are super cold here.  Wind chill is close to zero again with gusts of about 50 mph but we are toasty warm inside with a nice fire going.  Hubby was able to get propane for the gas logs Saturday.  This really helps keep the house warm.  Our little woodstove is a work horse.  However it  was severely overworked last week trying to do the job all by itself with zero temps.  Pray our water doesn’t freeze again. 

We are going to get some tires put on the front of the car.  Hubby didn’t work today, so he is going with us.  I’m glad.   Enjoy your day and God bless.

Candy

We had so much fun yesterday making candy.  When we got to Vicki’s, she had already made sugar cookies for the kids to decorate.  They loved it.  After lunch, we made oreo truffles, then peanut butter balls and last we dipped oreo cookies in white chocolate.   It was such a fun day.  The recipe I use to make the peanut butter balls is:

1 stick butter-softened, 1 lb powdered sugar.  Mix these together.  Then add 2 cups creamy peanut butter.  Mix everything together.  You will need to add about 1/4 cup water to this.  Just add a little at a time until it is a little creamy. Be careful not to add too much water.  Form into balls.  In a double boiler, put 2 cups chocolate chips and 1/4 block parafin wax.  Heat until chocolate is creamy.  Dip peanut butter balls into chocolate.  Place on wax papered cookie sheet.  Refrigerate and enjoy.  These are much better after they chill.  I want to make Martha Washington balls next.  I think they are my favorite.
