Potato Soup

4 cups peeled and diced potatoes, 1/2 cup minced onion, 2 cups chicken stock or one 13 3/4 oz can chicken broth, 1 tsp salt, 1/2 tsp celery salt, 1/8 tsp. pepper and 2 cups milk.

Put all ingredients except milk in sauce pan and simmer until potatoes are done.  Add milk.  Soup may be thickened with a flour and milk mixture.

Fantasy Fudge

I got this recipe years ago from the back of a marshmellow creme container.  I have used it since for making fudge.  It is easy and delicious.

Fantasy Fudge in the microwave

3/4 cup butter, 3 cups sugar, 5 oz. evaporated milk, 1 12 oz package chocolate chips (2 cups), 1 7 oz jar marshmellow cream, 1 tsp. van.

Microwave butter in 4 qt glass bowl on high 1 min.   Add sugar and evaporated milk.  Mix well.  Microwave on high 3 min. Stir.  Microwave on high 2 min.  Stir.   Microwave on high 3 min. Stir.  Microwave on high 2 min.  Stir.  Remove from microwave, add chocolate chips.  Stir until chips are melted.  Add remaining ingredients.  Mix well.  Pour into greased 9 x 13 cake pan.  Cool at room temperature.  Cut into squares.  Makes approx. 3 lb.

I use this same recipe for peanut butter fudge, vanilla, and butterscotch.  Just substitute the chocolate chips  with peanut butter chips or whatever type you are using.  When making chocolate fudge, we prefer milk chocolate chips.

Pumpkin Roll

Marie’s Pumpkin Roll
3 eggs
1 cup sugar
2/3 cup pureed pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 cup chopped nuts
powdered sugar

Beat eggs on high 3 min.  Gradually beat in sugar.  Stir in pumpkin, lemon juice.  In a separate bowl, mix dry ingredients.  Fold into pumpkin mixture.  Spread into a greased 15X10X1″ pan.  Top with nuts.  Bake at 325 degrees for 15 min.  Turn out onto a towel sprinkled with powdered sugar.  Starting at the narrow end roll towel and cake together, cool and unroll.  Use wax paper to turn it out on. 

Filling

1 cup powdered sugar
6 oz cream cheese
4 tbsp butter-softened
1/2 tsp vanilla

Beat until smooth.  Spread over cake roll.  Roll up pumpkin roll and chill well.

Hello everyone.   May I introduce Miss Katie Lee! Isn’t she beautiful?   She was born Wednesday evening at about 6:30 and weighed 7 lb. 7 oz.   No complications-THANK YOU, LORD!

We got the first call about 2:30 A.M. Wednesday morning.  Things progressed steadily.  The girls and I watched the boys Wednesday and David stayed with Jess.  God always works out the best timing.  After Katie was born, we took the boys to the hospital to see Jess and Katie.  Daniel is so excited to have a sister.  He loves babies.  Then David brought everyone home and stayed with them overnight while I stayed with Jess and Katie.  The next morning we traded out again.  Then David brought his girls home last night.

He Needs A Name

Well, we have decided to give Mr. Rooster a chance.  If he is a good boy, I guess we’ll keep him.  We all think he sounds so cute when he crows.  We have decided his crow adds a little something to our day.  Wow, we really DO need to get out more.  Anyway, we’ll see how it works out. 

Yesterday, we worked with blackberries.  We made some blackberry juice.  Then took the berries we had cooked down to make the juice and put them in the Roma sauce maker.  The sauce maker takes out all the seeds.  We then make blackberry freezer jam.  We had some blackberry puree left over and I wondered what I would do with it.  Then I thought HOMEMADE BLACKBERRY ICE CREAM!  It was so good.  I tried to take a picture to share with you all but I couldn’t get it to turn out right.    I got the recipe online at Cooks.com but altered it some to better suit us.  Anyway, here is the recipe I used:

2 cups blackberry puree, 2 cups sugar, 3 eggs beaten, 1/4 tsp salt, 1 tsp vanilla extract, 6 cups milk, 1 can (12 oz) evaporated milk.  I mixed all the ingredients together and put it into the ice cream maker.  I plan on making peach ice cream this weekend when Dave, Jess and the boys come up. 

I went to work with Hubby this morning and helped him until lunchtime.  Then came home and the girls and I started working on the peaches.  We made some peach freezer jam and then canned some of the peaches.  We saved the peelings again and got 2 more qts of peach juice.  We also had a peach cobbler for supper.  I love peaches.

Babies

We have kitties!   The girls are so happy.   These four belong to Stripes.   Babies are always so exciting.   Temperature this morning was pretty chilly, mid 30’s.  Hopefully it will warm up and we will have some sunshine.  We worked outside yesterday afternoon on the chicken run.  It is almost finished.   Then it started to rain so we had to hurry and put everything away.  Oh well, every little bit helps get us closer to being finished with it.

David’s sister had her baby yesterday.  I will post a picture as soon as I figure out how to get it off my email.  She had a little girl, Emily, and she weighed 7 lb. 9 oz.  They both seem to be doing well.   As I said earlier, babies are so exciting.
