Today is a beautiful day here in Floyd.  The sun is shining.  Temperature is 55 degrees.  I LOVE IT!  I know there are lots of people who enjoy winter and cold weather.  I am not one of them.  For my part, it could just stay like this until spring.  I’m pretty sure it won’t though.  We have lots of geese on the pond today.  Probably close to 50.  They seem to be enjoying the warmer temps too.

We have been busy today making treats for Jessica’s “goodie” basket.  So far, we have made chocolate chip cookies and Russian tea cakes.  We still have Martha Washington balls and peanut butter balls to make.  She always wants ritz crackers with peanut butter spread between them, dipped in white chocolate with an m & m on top(I have no idea what this is called but it is one of her favorites).  Tomorrow I will be baking a ham and making homemade rolls.  Other things on the menu (as of right now)-pasta salad, green beans, cocktail weiner, angel punch and sausage balls.

Apple Muffins

Here is a picture of the apple muffins I made this morning.  They were very good.  I definitely will be making them again.  Thanks for sharing the recipe, Cheryl.  Here is the recipe: 

2 cups flour (I used whole wheat), 1/2 cup sugar, 1 tbsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, 3/4 cup apple juice, 1/3 cup oil, 1 egg and 1 cup diced apples.  Combine all ingredients and put into muffin pan.  Bake at 400 degrees for 20 min.  Next time I make it I will add nuts but I didn’t this time.  Anyway they were really good.

Today has been rain, rain, and then some more rain.  Extremely dreary.  Hubby is having trouble with the van  but has been unable to work on it because of the rain.  We did manage to sneak in a picnic lunch over at the park.  They have a shed there and we were fortunate enough to get to use the shed, otherwise we would have had to come home.  We had hamburgers on the grill, pasta salad and yogurt.  We got some more good pictures to share.

Garden Enjoyment

I thought I would post a few pictures of things that are growing in our garden.

Sweet banana peppers.  YUM!  Hubby and I have had to start watering our garden.  It is so dry here.  Forecast is calling for a chance of rain over the weekend.  We really need it.  Seems like no matter how much you water, it never does the garden as much good as rain from God does.  I think I forgot to tell everyone what a nice weekend we had here-very cool temperatures.  Two mornings when we got up the temperature was 43 degrees- then up to the lower 50’s, upper 50’s and today mid 60’s.  Daytime temperatures over the weekend were great-low to mid 70’s.  Starting Monday though its been back up to HOT-not near as hot as some places but hot for us.  96 degrees yesterday when Hubby came through Christiansburg.  Upper 80’s here on the farm. 

Last nights supper was grilled chicken, green beans, pasta salad and rolls.  I fixed everything on the grill so as not to heat the house up any more than it already was.  We ate outside at the picnic table.  It was really nice.  A little breeze was blowing which helped a lot .  Yesterday I got a recipe from my friend Vicki-applesauce pie.  I made it and thought it was really good.  I wanted to share it with you all.

2 eggs, 1 cup sugar, 2 tbsp flour, 1 tsp.ground nutmeg, 1 stick melted butter, 1 cup applesauce, 1 tsp vanilla.  Combine sugar, flour, and nutmeg.(You can use cinnamon instead or a little of both).  Beat eggs, add eggs to dry ingredients.    Gently combine butter applesauce and vanilla until mixed.  Pour into pie shell.  Bake at 350 for 45 min or until golden brown.   (I would recommend if your applesauce is sweet to cut down some on the sugar, I didn’t but Hubby thought it was a little too sweet.  I thought it was just fine.)

Doll Bunkbed

Hubby’s latest  project.  A doll bed for Barbara’s grandchild.  I hope she likes it.  It was a lot of fun making.  It fits the American girl dolls or any 18″ dolls.  We will deliver it this evening.  We are going over to our friends, the Horns, for tacos tonight.   The girls can hardly wait.  The ice storm predicted for this morning didn’t happen.  I’m glad.  Dave, Jess, and Daniel will be here tomorrow about lunch time.  I think we’ll have ham, baked beans, pasta salad and homemade rolls.  Maybe red velvet cake for dessert.  Sounds pretty good!  Guess I better get started on some of that food.  Happy New Year and God Bless.
