Pumpkin Roll

Marie’s Pumpkin Roll
3 eggs
1 cup sugar
2/3 cup pureed pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 cup chopped nuts
powdered sugar

Beat eggs on high 3 min.  Gradually beat in sugar.  Stir in pumpkin, lemon juice.  In a separate bowl, mix dry ingredients.  Fold into pumpkin mixture.  Spread into a greased 15X10X1″ pan.  Top with nuts.  Bake at 325 degrees for 15 min.  Turn out onto a towel sprinkled with powdered sugar.  Starting at the narrow end roll towel and cake together, cool and unroll.  Use wax paper to turn it out on. 

Filling

1 cup powdered sugar
6 oz cream cheese
4 tbsp butter-softened
1/2 tsp vanilla

Beat until smooth.  Spread over cake roll.  Roll up pumpkin roll and chill well.

Katie’s First Thanksgiving

You will notice I am doing something a little different on the blog.  I have wanted to do this for a long time and yesterday David fixed it for me.  I now have a recipe link on the sidebar.  Hopefully, I will be able to remember how to make it work.  Today, I put the recipe for Oatmeal Muffins on.   (Are you proud of me, Dave?)  I got this recipe from my friend Cheryl at http://holcombhappenings.wordpress.com/ and it is one of my favorite breakfast muffins.

Oatmeal Muffins

Oatmeal Muffins
 
  1 cup oatmeal
 1 cup buttermilk (or sour milk)
 1/3 cup applesauce
 1/2 cup brown sugar
 1 egg, beaten
 1 cup flour
 1 tsp. baking powder
 1/2 tsp. salt
 1/2 tsp. baking soda
3/4 cup chopped walnuts
1/4 cup raisins 

Mix all ingredients together.  Stir in nuts and raisins last after everything else is mixed. Put into muffin tin and bake at 400º for 20 – 25 minutes

Angel Punch

Angel Punch–1/2 gal. pineapple sherbet, 1 large can orange juice, 1 large can apricot nectar, 1 2 liter ginger ale.  Everything needs to be nice and cold when you mix it together.

Happy Thanksgiving

Hello ladies, I’m sorry I haven’t posted in a while.  For some reason, things have been busy around here and it’s been difficult for me to make a post.  Grace is feeling better and I thank you all for your prayers for her.  So far, we have been blessed that no one else has gotten sick.

We are on Thanksgiving break from school.  The girls are very happy.  Today is planned out as just a fun day.  We will watch a movie, The Prince of Egypt, also play a few games, and listen to Christmas music.   I will also be busy baking today.  We are doing Thanksgiving at Jessica’s.  Everyone is bringing something.  I am to bring the rolls and the ingredients for punch.  The punch we all love is called Angel Punch.  Jessica’s grandmother, Marie would always make this punch at Thanksgiving and Christmas.  We really like it.

My bread machine just beeped so it is time to start shaping the rolls.  I better get busy.  I pray you all have a safe and happy thanksgiving.  God bless.

 

Eagle

Our first eagle spotting of the year.  So exciting!  We think they must travel through here every year.  They are so pretty.  I remember the first year we lived here.  The girls were very young.  We were sitting outside talking about the different birds we had saw that day.  One of the girls said “Oh, Mommy, I wish we could see an eagle”.   I remember thinking that would really be something to see an eagle in the wild.  Then that fall we saw them.  We  were SOOOO excited and we still get excited every year when they come through. 

My Grace is sick with strep throat.  Yesterday we went to the doctor and got antibiotics.  Today has been a pretty rough day for her.  We are praying that by tomorrow she will start to feel better.  She is sitting in her favorite chair enjoying a new book she just got with her birthday money. 

Hubby has been busy this morning working on the brakes on the van.  He was having trouble with them but thinks he has gotten the problem fixed.  I am so thankful he is able to work on our vehicles himself.   Hubby and I will be going up on the hill later to cut a load of wood.  Then he wants to work on Jess and Dave’s bed.   He wants to work on the stain color to make sure he has it just right.  Then it will be time to stain and poly.  YEAH.  I can’t wait to show you ladies how it looks.  It looks beautiful!

Opinion

Okay, ladies, I need your opinion on this.  You all may remember that I have been selling homemade laundry soap at the Bread Basket here in Floyd.  The laundry soap is lavender scented.  Well, I have been thinking about putting homemade lavender fabric softener with it for sale.  What do you all think about this as a container for the fabric softener?  I have been trying to think of a container that I could easily recycle.   The less expense I have in the container the more my profit.  This would be concentrated.  The customer would need to add 3 cups water to it and it will yield 10 loads of laundry, the same amount as the laundry soap I sell.  I have put these instructions on the card.

Today has been a beautiful day here in Floyd.  Plenty of sunshine with a good breeze.  Perfect for drying clothes on the line.   I love to see clothes flapping in the wind.  This means they will dry quickly and will be so soft. 

I tried a new homemade coffee creamer today.  It is Almond Coffee Creamer.  I changed the recipe some to suit our tastes.  3/4 cup powdered sugar, 3/4 cup non-dairy coffee creamer, 3/4 cup powdered milk, 1/2 tsp. cinnamon, 1 tsp almond extract.  Put all ingredients into blender and blend well.  I must admit I had some trouble getting it to blend together  but I just keep on trying.  I like almond extract in other things so I thought it would be worth trying.  I do like it and think it would definitely be worth making again.   I was wondering if I could  use this same recipe with different extracts, peppermint for example.  I’m not sure how the cinnamon would go with the peppermint though.

Finished with Deer

No picture-just wanted to let you all know we have finished working up the deer.  We got 20 qts canned, 16 roasts in the freezer and 15 bags of tenderloin.  YEAH!  We are all tired and so I think tonights supper will be left over homemade chicken noodle soup.   Enjoy your day and God bless.
