
Good morning everyone! I hope y’all are having a great day. It is a beautiful day here. The snow is coming down so pretty. I decided it was a great day for making homemade soup and canning it.
This time I actually keep up with the ingredients that I put in it. Here is the recipe:
4 to 5 lb ground beef, 2 qts home canned tomato juice, 1 qt home canned stock, 4 beef bouillon cubes, 1 32 oz bag frozen southern style hash brown potatoes, 1 28 oz bag frozen corn, 1 28 oz bag frozen mixed vegetables, 1 12 oz bag frozen onions, 2 14.5 oz cans petite diced tomatoes, 2 15.5 oz cans pinto beans, 2 heaping tsp minced garlic, 1 qt water, salt and pepper to taste.
Brown ground beef. Put all ingredients into large stockpot. This amount fills my 10 at stockpot to the top. Heat soup up then put in jars.
Yields 10 qts of soup. Pressure can for 90 minutes.
