Peach Salsa
Peach Salsa
9 cups fresh peaches, peeled and chopped
2 T lemon or lime juice (fresh or bottled)
4 cups fresh tomatoes, peeled and chopped
2 large sweet green peppers, diced
1 large sweet red pepper, diced
2 cups onions, diced
2 T dried crushed red pepper flakes (or fresh hot peppers if you wish. Add more or less to your desired heat level)
1/4 cup cilantro, chopped (or use fresh parsley if you don’t care for cilantro)
1 cup apple cider vinegar
3 garlic cloves, minced
3 T honey
2 T clear gel if desired to thickenMix peaches with lime or lemon juice. Combine all ingredients in large pot. Bring to boil over medium heat and cook for five or six minutes. Remove from heat. Ladle into canning jars. Screw on lids and process in boiling water canner for 10 minutes. Makes 8 pts.

Peach Salsa

Hello everyone! I hope you are all having a great day. We are trying something new here today. We are making peach salsa. I got the recipe from here. Ours looks a little different from hers as we are using white peaches. They were given to us by Tom and Sally. You all remember them. He was our previous pastor before Shannon. Jess was the one who gave us the idea of making peach salsa. She was supposed to help make it however she has been very sick. We spent many hours in the emergency room with her. I think they have come to the conclusion she has Lyme disease. This is so bad here in Floyd. So many people have gotten it. You all probably remember Grace had it last summer. Speaking of Grace, she had a great time at camp and is already looking forward to going again next year.This new chemo has been a little harder on Hubby than the other one was. The doctor wants him to stay on it for 3 months and then she will run another scan to see how the cancer is responding to it. Your prayers are as always so appreciated.

Veggies and Stuff

Hello everyone! Lots of things have been going on here in Floyd. For one, the garden is producing very well. I am trying something different for us this year in the garden. We have tried planting all our crops in 2-3 week intervals. My thinking is to have fresh produce all summer long. Example, we just finished one section of green beans and corn and another section is ready to start picking. No huge amounts at one time-just enough to can and eat. It is keeping us busy but not overwhelming. I like that. With all we have going on right now it is working really well for us.Hubby is scheduled to begin a new round of chemo next week. This is a different type of chemo than what he has taken before with different side effects. We are praying it will not be too hard on him.
Grace on her way to camp for the first time. Both Julie and Grace have volunteered at this camp for a couple of years now but this time Grace will be a camper. She was SO excited!
Julie has a part time job at The Bread Basket here in Floyd. She loves it. My girls are growing up!Enjoy your day and God bless.

Friends

Last Sunday afternoon, we made a trip down the Parkway to have a little relaxation time. It was hard but I got this group to be still for just a moment while I took a picture. From left to right, Grace, Zeke, Logan, Julie and Josiah. Zeke and Si are two of our pastors sons and Logan is in our youth group at church.
We spent the afternoon listening to this group-Pike City. The boy playing the banjo is our pastors oldest son, Zeb, and the one playing the guitar is next in age. His name is Tony and the girl is Karissa (Tony’s girlfriend). They are very talented and are always a joy to listen to. The weather as you can see was beautiful.Enjoy your day and God bless.

Blueberry Muffins
These are easy and delicious. I’m pretty certain any fruit would work in these. I use self rising flour and elimate the salt and baking powder. I got this recipe from http://www.inspiredtaste.net/18982/our-favorite-easy-blueberry-muffin-recipe. Yields 8- 9 regular size muffins
1 1/2 cups all-purpose flour
3/4 cup sugar, plus 1 tablespoon for muffin top
1/2 teaspoon kosher salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg
1/3 1/2 cup reduced fat (2 %) milk
1 1/2 teaspoons vanilla extract
1 cup fresh blueberries
DirectionsHeat Oven and Prepare Muffin Cups- Heat oven to 400 degrees F (205 degrees C). Then, line 8 standard-size muffin cups with paper liners. Add 1 to 2 tablespoons of water to the 4 empty muffin cups (this helps to make sure the muffins bake evenly).
Prepare Muffin Batter- Combine flour, 3/4 cup of the sugar, baking powder and the salt in a large bowl with a whisk. Whisk at least 10 times to make sure the baking powder and salt have evenly dispersed.
- Next, add vegetable oil to a measuring jug that holds at least 1 cup. Add the egg then fill the jug to the 1-cup line with milk (this should be 1/3 to a 1/2 cup of milk). Add vanilla extract and whisk until combined.
- Add milk mixture to the bowl with flour and sugar then use a fork to combine. Do not over mix. Add blueberries and use a spatula or spoon to gently fold the blueberries into the muffin batter. Then, sprinkle a little sugar on top of each muffin.
- Bake blueberry muffins 15 to 20 minutes or until tops are no longer wet and a toothpick inserted into the middle of a muffin comes out with crumbs, not wet batter. Transfer muffins to a cooling rack and cool completely.

Raspberries

Our raspberries are coming in! We all like raspberries but Julie LOVES them. Every day she goes by the vines and grazes on the berries. So the other evening she had went to close the chicken lot gate and thought she would pick her a few berries while she was out there. As she was picking she noticed a calf very close to the garden fence. She thought she would keep an eye on it as it looked like it was thinking about trying to get in the garden. She picks a few more berries and hears the calf make a strange noise. She looks at it again, it looks at her and guess what? It is not a calf but a bear!! Probably about 100 ft from where she is!! She starts walking slowly back toward the house. The bear notices her movement and starts slowly going up the field. She comes and gets us to see it. It goes up the field to the top of the hill and then goes under the fence and out into open pasture (hopefully not to return). Julie then returns to picking her raspberries. I told her I guess that means she is a true country girl-not even a bear can stop her from picking berries!!Enjoy your day and God bless.

Beautiful Days

I thought I would share a few pictures with you all today. We have been enjoying BEAUTIFUL weather here in Floyd.
I took these pictures the other day as I was mowing. We keep this little pathway mowed going down to the pond.
This is the view from the lawnmower. I was hoping to show how pretty the corn rows looked. The sun was shining and the wind was blowing. It was beautiful. Mowing around the pond is my favorite place to mow. I consider myself so blessed to live where we do.Enjoy your day and God bless.

Peas

Can anyone guess what we are having for supper? That’s right, you guessed it, peas!! This is very exciting for us as we have not raised peas in several years because they just didn’t seem to do well here. Well, this variety is doing excellent. I don’t know, maybe we got them planted at just the right time but whatever the reason they are loaded with beautiful peas. This variety of pea is called snowbird and we ordered them from Burpee. My mother used to plant these when we lived in Grundy and they always did well. I was thinking about them this spring and wishing I knew the name of them. It occurred to me to check in the freezer as I still had some seeds saved from my mom in there. Guess what, an empty package was in there with the name and the product number on it of these peas. If you look in Burpee’s catalog this pea is not shown. However if you type in the product number it still comes up on their page. I was so happy. Also with these peas we will be having swiss chard out of the garden. This is a new thing for us. I don’t remember ever raising chard before so we will see if we like it or not. For dessert I fixed an applesauce pie. Can you tell Hubby is home and doing amazingly well for all he has been through. He went outside in the yard today for a while and sit in the green swing. We are both so thankful for everyone’s prayers and ask you still continue to pray.Enjoy your day and God bless.

A Reminder

Just a little reminder this morning that God always keeps his promises. As I was sitting in my swing this morning drinking my coffee this is what He showed me. A beautiful rainbow-no rain- just the rainbow. I know many of you will understand this when I say, I considered it my personal reminder from God that He loves me. Sometimes I just need to know that and I love all the special ways He shows it to me.Hubby is doing very well. He was given a clear liquid diet yesterday and he said jello tasted delicious. Hopefully he will get real food today. He is doing a lot of walking as they have said this will speed up recovery.

Good Morning

Good morning everyone! I wanted to take a few minutes to share with you all how Hubby is doing. He had his surgery on Wednesday, May 27th. A friend looked it up for me and he had his other surgery last year on May 31st. Anyway, first off I want to thank my pastor’s wife Bumblebee who sat with me the entire day while Hubby was in surgery. Jessica joined us as soon as David got off work to watch the kids. We have decided Bumblebee, Jess and myself make a pretty good sitting at the hospital team. You all my remember Bumblebee sat with us through many long hours of labor to get John Luke here.They took Hubby back for surgery around 1:00, actually started the surgery at 2:00 and finished at 9:00. It was definitely a long day. 7 hrs of surgery. Of course, as almost all medical procedures go it was a little more complicated than the surgeon anticipated. It is done though. The big tumor is gone, the fistula is gone, the large and small intestines are joined back together and we pray will be working properly. As soon as he recouperates they will start chemo on the tumors on the liver. He is in considerable pain but sat up on the side of the bed yesterday for about 30 min and walked the length of the room and back.
I appreciate all your prayers so far and ask that you would continue to pray for us. We consider all this a miracle from God. This time last year, we truly thought God was ready to call George home. God said “not yet” and we are thankful for that.
