  • Deviled Egg

    I got this recipe from Vicki.  These are the best deviled eggs I have ever tasted.

    6 eggs
    3 tablespoons ranch dressing
    1/2 teaspoon prepared yellow mustard
    1/8 teaspoon salt

    Boil eggs.  Peel eggs; cut in half lengthwise. Carefully remove yolks; place in small bowl. Mash yolks with fork until smooth. Stir in remaining ingredients except paprika until well blended  Spoon yolk mixture into egg white halves. Sprinkle with paprika.

     

  • Picnic Time

    IMG_1577We love getting together with family and friends for picnics and good fellowship.  Yesterday our table looked like this.  We enjoyed a wonderful meal with our friends, the Horns.  Dave, Jess and kids came over for a while also.  It was a really nice evening.  Today we went to Pandapas Pond for another picnic.  Chuck and his family came, Jess and her family and us.  The younger kids played in the pond and us older ones sat around and talked.  Great times.

    I wanted to let you all know about what has been going on here in the last few weeks.  George is taking a much needed break from chemo.  While he is on this break, the doctors have decided it is a good time for him to have his surgery.  The tumor on his bowels has shrunk enough that they are going to remove it.  This is a huge praise!!  They will be removing the fistula that is connected to his bladder, repairing the bladder and removing his colostomy.  This will be happening on Wednesday, May 27th.  We so appreciate your prayers on this as this will be a major surgery.  They estimate he will be in the hospital for 5 days.  The tumors are still present in his liver but this will greatly improve his quality of life(these are the doctors words).  All we know is what we have said all along-GOD IS IN CONTROL AND GOD IS GOOD ALL THE TIME!!

  • New Salad

    New Salad

    IMG_1530This is my new favorite salad.  It has spinach on the bottom, cherry tomatoes, cucumbers, black beans, strawberries and feta cheese.  I usually do not like vinaigrette dressings but this raspberry one is really good with this salad.  The spinach is store bought but

    IMG_1523ours is coming along nicely.   I look forward to our own fresh greens in our next salad.

    IMG_1532I thought I would share an early morning picture with you all.  These two pictures were taken from our front porch as Hubby and I drank our morning coffee together.  I am so blessed!  A year ago at this time we did not know if the Lord would give us another year together or not.  The same applies today however one thing we do know-God is in control and I praise Him for that.

  • Dandelion Jelly

    Dandelion Jelly

    IMG_1512Yesterday the girls spent the afternoon picking dandelions.  We are making dandelion jelly.  We tried to make it several years ago but it never set up to jelly stage so we had dandelion syrup.  It was very good just not what we were trying to make.  So this year we are trying again.  We followed the recipe found here http://www.simplycanning.com/dandelion-jelly.html

    IMG_1513They picked about a gal. of dandelion flowers however this was too many.  Next time we will not pick as much.

    IMG_1514The most time consuming part is getting off all the green stuff.

    IMG_1516I have excellent helpers though so no matter what we are doing it goes fast and is lots of fun.  These girls are awesome!

    Spring is in the Air

  • Black Bean Burgers

    This is Vicki’s recipe for black bean burgers.

    Baked Black Bean Veggie Burgers

    1 (16oz) can black beans, drained and rinsed

    1/2 green bell pepper(I always leave this out)

    1/2 onion(I use onion powder)

    3 garlic cloves

    1 egg

    1 Tbsp chili powder

    1 Tbsp cumin

    1 tsp hot sauce

    1 cup breadcrumbs

    1. Pre-heat oven to 375º.

    2. Dry off the beans as much as possible. In a bowl, mash beans with a fork until thick and pasty.

    3. Finely chop bell pepper, onion, and garlic and stir into mashed black beans.

    4. In a small bowl, stir together egg, spices, and hot sauce.

    5. Stir egg mixture into beans. Mix in the bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.

    6. Place patties on lightly greased baking sheet. Bake about 10 minutes on each side.
