I’ve really been into meals in a jar recently. I love this concept.

  • Tomato Soup

I canned up this tomato soup back during the summer. We opened a jar yesterday for lunch. It is really good. I definitely want to do more of it next year.

  • A Fall Walk

    A Fall Walk

Good afternoon everyone! I hope you have all been having a good day.

Things are good here. It was a little chilly this morning so I built our first fire of the season. It felt really nice!

Later in the day, Grace and I decided to take a little walk around the upper fence line. We ended up walking about one and one half miles.

This is our home. We LOVE living here!

A view of the pond from the top of the fence line!

There were a few flowers still holding on. This goldenrod was still really pretty. Goldenrod has been beautiful this fall❤

Fall colors are just beginning to really put on a show.

    I love fall!

    God bless!

Good morning everyone! Beautiful sunrise here at the farm today! I love sunrises and sunsets!

We didn’t do a lot yesterday. Mostly just catching up from the trip. All our stuff put away and all the clothes washed, things like that. This picture is from the back side of our road.

Grace’s friend, Micah, had some dental work done Friday so we took him over a jar of homemade soup. These two pictures are from his road.

We live in such a beautiful place!

Sunrise over the pond! I hope you all have a wonderful day! God bless ❤

    Day 5

Good morning everyone! Last day of our trip. Not much going on today. We walked down to the beach for one last sunrise.

It was beautiful! We went back to the rental and loaded the car. Then began the 10 hr drive home.

    It was a wonderful trip!

    God bless!

    Day 4

Good morning everyone! Day 4 started out raining! I walked down to the beach but it was too cloudy to see the sunrise! The wind was ripping,  the waves were roaring and the rain was pouring! It was awesome!

After breakfast, we visited the shops we like to visit. We got everyone back home a little prize then came back to the rental for lunch.

After lunch, we walked Driftwood again and then walked the DQ trail.

After supper, we went to St. Andrew’s Park beach. Time now to begin packing for our trip home.

    God bless!

    Day 3

Good morning everyone! My early morning walk to the beach held a surprise. Dolphins!!! It was so exciting to see them!

After breakfast, we went to Clam Creek park. It is so pretty there.

We saw several more dolphins there. Grace got lots of good pictures!

The trail there is another one of our favorites. This year we discovered that this trail connects to the trail that runs parallel to Driftwood beach. We learn something new every year.

After walking this trail we came back to the rental, ate lunch and headed back out for another walk.

This time we walked the Horton Pond trail. We discovered this trail last year. It is a beautiful trail! It is pretty buggy but worth the walk.

It leads to a pond that has several alligators in it!

    Some were pretty big!

After that, we went to DQ, got our supper and ate at the beach pavilion. We eat at least one meal there every year!❤

Our last place of the day was Driftwood. We try to go there every day, sometimes more!

    God bless!

    Day 2

Good morning everyone! We are having a great time on our beach trip. I always go to the beach early for the sunrise!

After breakfast, we went to Driftwood beach .

We love the fact that it isn’t crowded here. Of course, we are here in the off season so I’m sure that is part of it. We walked around here for a few hours. Then we went back to the rental for lunch.

After lunch, we walked the DQ trail. We love this trail.

We saw the alligators. There were baby alligators there but my phone couldn’t get a good picture of them. Grace got some on her camera though that shows them pretty good.

After walking that trail, we went down to the welcome center. They have a platform that you can walk up. It is really pretty there. Lots and lots of bird activity. You can also see the big bridge way off in the distance. After that, we came back to the rental and ate supper. We rested for a little bit then went back to Driftwood. There is a trail that goes parallel to the beach.

To our surprise, we saw these spoon bills. They are so cute!

I love getting these pictures of us on our walks!

    It was a beautiful sunset!

    God bless!

    Day 1

    Good morning everyone!

As you can tell, we are at the beach! We drove down yesterday. It takes about 9 hours for us to get here so as you can imagine it is a long day. We left about 6:45 and arrived at our rental about 4. First we unloaded the car, then went to Dairy Queen for supper. We enjoyed our chicken strips at one of the picnic tables DQ provides then we went straight to Driftwood beach. It is our favorite beach and always the first one visit.

By this time, it was getting late and time to go see the sunset.

We discovered this beach last year when we were here. It is a beautiful place to see the sunset. I think the name of it is St. Andrew’s beach.

After the sunset, we went back to the rental, drank some tea and relaxed for while. We want to bed early as it had been a LONG day!

That’s all for the first day. God bless!

  • Canning White Chicken Chili

    https://homesteadingfamily.com/how-to-can-white-bean-chicken-chili/

Changes I made to this recipe:

I added 2 bags of frozen corn. 3-4 cups

I didn’t have canned green chilis so I used 1 cup fresh peppers from the garden. 2 of those peppers were sugar rush peach(for a little heat).

I also used 4 cans store bought great northern beans instead of dried beans.

I did not add the cayenne powder.

Next time use 8 cups of stock.

    Makes 5 qts.
