Beautiful But Cold

Good morning everyone! It is beautiful here in Floyd today. As you can see, we have some snow. The main thing here today is the temperature. We are -2 degrees with a wind chill of -20. Our wind is about 40 mph with gusts close to 50 mph. I took this picture this morning in one of the rare moments when the wind wasn’t blowing. We were hoping for enough snow to make snow cream today but I think the wind has blown most of it away.
We had our valentine dinner at church yesterday evening. So much good fun. The youth do the dinner as a fund raiser. It really surprised me to see how many people showed up. Of course, I think all of wished we had left just a little earlier. The roads were terrible coming home. We tried to come home our normal route but it was too bad. We had to turn around and try another way. Then when we got out on the main road it wasn’t much better. But praise the Lord as far as I know everyone made it home safely. I am SO glad Hubby changed his mind and decided to go with us.
This little cold snap is expected to stay with us for a while. Monday they are calling for snow, 12 in. or more. Then temperatures in the negative numbers which will put the wind chill down really low. We really can’t complain though as so far we have had a really mild winter. I think Jess would disagree with me but it IS true. I have pictures to prove what some of our winters have been like.
I think today is definitely a snuggle in day. I think I’ll make a pot of homemade soup. Enjoy your day, stay warm and God bless.

Sushi

We had such a good time Saturday evening making our sushi. I am told these are actually called California rolls as Jess could not have raw fish. Anyway whatever you call them they were delicious. It was fun learning how to do something new.
And then just because in pregnant world somehow homemade hot fudge cake goes with sushi, we had this for dessert. I made buttermilk chocolate cake and hot fudge sauce. I tried to make a link for these recipes but I couldn’t get it to work. The recipes though can be found on my blog under desserts. The only difference was I used milk chocolate chips instead of semi sweet in the fudge sauce. It gave it a different taste, almost like chocolate caramel. I really liked it as I am a huge caramel fan.
So next, just to make everyone go, YUCK, I want to show you the splinter that came out of my finger.
That’s right everyone say wow! To be truthful, it really felt like it should be much bigger. I pulled part of it out last week and thought I had gotten it all. But then it started to hurt, really bad. Our pastor’s wife, Bumblebee, knows a lot about essential oils. I showed my finger to her and she gave me some oil to put on it. She said it would draw the splinter out. She was right. I put it on my finger 3 times yesterday and this morning it was up to the top of the skin and was very easy to pull out. Amazing!
Temperatures have been WONDERFUL here for the last few days. It was mid fortys here this morning when we got up. We actually enjoyed our morning coffee outside on the green swing. How amazing is that!!

Wendy’s Frosty Copycat Recipe
1/2 gal chocolate milk
1- 8 oz container cool whip
1 can sweetened condensed milk
combine all ingredients and place in ice cream maker. Enjoy!!

Wendy’s Frosty

Hello everyone! I just finished making this ice cream which I must say is very good. I am not a big chocolate person. I know, go figure, right. But this ice cream tastes just like Wendy’s frostys which I do like because they do not taste super chocolately.
I got the recipe from here-http://www.popsugar.com/food/Wendy-Chocolate-Frosty-Recipe-35304956 I think one of the reason I like it is that it is simple. Only three ingredients. I really like that.
Tomorrow we will be making sushi at Jessica’s. Very exciting. I will try to get pictures to show you all. This will be our first attempt at making sushi at home. Hopefully all will go good. We’ll see. We are always up for trying new things.

Cookies

I spent some time today making these sugar cookies. Sugar cookies are mine and Daniels favorite. I made up a batch of dough and then put them on a cookie sheet and froze them.
After they are frozen, I store them in the freezer for future use. All I have to do is take them out and bake them. It makes cookie making much easier. I like to do this with chocolate chip, oatmeal and molasses.
On Sunday, we helped the Horns celebrate Madison’s sixteenth birthday. She is such a special, beautiful young lady.
Well, I better get busy on supper. We are having roast chicken, rice and green beans. I hope you all have a wonderful evening and God bless. -
Country Crock Sugar Cookies
1 cup country crock spread (or butter)
1 cup granulated sugar
1 large egg
2 tsp vanilla
2 and 2/3 cups all purpose flour
1 and 1/2 tsp baking powder
1/2 tsp salt
Preheat oven to 350 degrees. Beat country crock spread with sugar in large bowl with electric mixer until light and fluffy, about 3 min. Beat in egg and vanilla until blended. Beat in flour, baking powder and salt.
Shape dough. Place on baking sheet and bake for about 10 min or until edges are golden brown. Enjoy!

Before and After

Okay, so I can’t believe I am showing you all how BAD the attic looked! But this was what it looked like yesterday morning.This is what it looks like now. I know it still looks cluttered but at least the clutters look better. We decided to take the day off from school and just work on the attic. The joys of homeschooling. We had one load of trash, one load of donations and one load of baby things to take to Jess. Jess supplied us with supper so that really helped. It was nice not to have to cook after working all day. I don’t know if you can tell from the pictures but the room slants down. The only place I can stand up straight is right at the door. The rest of the area I have to stoop over and in the back I have to be on my knees. Needless to say, parts of me ached last night when I went to bed. Well worth it though. This job is now behind us.

More Ice Pictures

The other evening this was the view from our sitting room window. I thought it looked so pretty.

I couldn’t decide which picture I liked the best so I just used all three.We had a really nice weekend. We did have the Critter Chompin at church Saturday night. Not as many people showed up as usual though. Some probably thought it was called off or they just didn’t want to take a chance on getting out on the ice.
Yesterday was a good day at church. We had several visitors and some of them said they plan on coming back. Our little church has grown slowly but steadily since our new pastor came. He does a really nice job and has a wonderful family. They all really care deeply for the Lord and it shows in all they do. That is hard to find sometimes.
Last night for our Sunday night bible study meal we had a FEAST! We had chicken and dumplings, mashed potatoes, green beans, corn, rolls and lots of desserts. Good food. Then we did our study. We are finishing up Max Lucado’s study “Expericencing the Words of Jesus”. It has been a really good study. We have one more lesson to do and then we will start a new study by John MacArthur “Twelve Unlikely Heroes”. It looks like it will be really good also. Our little Sunday night group as grown as well. We actually even have a youth class on Sunday night’s now led by our pastor’s wife. I am so glad. For years, it was just our two girls. They would bring something to do and go into one of the classrooms and occupy themselves until class was over. Having other youth there is so much more fun.
I am putting something down in writing so that hopefully that will keep me accountable to do it. This week I want to clean out our attic!!! It is truly a mess. Years and years of accumulation of stuff. It will be a major undertaking and will take several days to finish. I have put if off for WAY too long.

Ice

Good morning everyone! Yesterday and last night brought ice to our little town of Floyd. It makes everything pretty but very dangerous. I am NOT a fan of ice. I would rather have snow any day over ice but the Good Lord knows what He is doing.

So they will have to dry inside. I LOVE the drying rack Hubby made for us several years ago. It certainly comes in handy. I did some research on using dryers a while back. From what I could read, every time you use your dryer it cost about 50 cents to operate. I estimate I wash about 30 loads a month. That’s a savings of $l5.00 if I don’t use the dryer. I do use it occasionally though so I am still saving about $l0.00 a month. I like that! I put the clothes in front of the fire at night and they are dry by morning. My kitchen is small so during the day I move the rack to the back porch area that we boxed in a few years ago.Well, that’s all for now. We were supposed to have our Critter Chompin tonight at church. I need to find out if it has been cancelled or not. Enjoy your day and God bless.
